4 sun dried Tomatoes

2 Teaspoons of pimentos

2 Teaspoons of fresh Basil, thinly sliced

1/2 cup of Roma Tomatoes diced

2 teaspoons of fresh garlic, thinly sliced... not crushed

salt and pepper to taste

crushed red pepper to taste

1/2 cup of Absolute Vodka

4 teaspoons of Olive Oil

1/2 pound of angel hair pasta (cooked al dente)

3/4 cup of heavy cream

Parmesan cheese grated

Ingredients

Serves

3-4 Tbsp olive oil
2 cloves garlic, thinly sliced
1/4 cup chopped fresh basil
12 oz rock shrimp (or any preferred seafood)
1/3 cup chopped sun dried tomatoes (tomatoes packed in oil, drained and blotted)
1/3 cup finely chopped green onions
1/4 cup diced pimentos
1 cup julienne tri-colored peppers (red, yellow, green bell peppers)
1/3 cup white wine
1 1/2 cups heavy cream
1/2 cup grated cheeses (Romano, Parmesan, Provolone or a blend of all three)
1 lb penne pasta, cooked

Methods/steps

1 Place sauté pan on high heat. Add olive oil. When hot, add garlic, basil, rock shrimp, sun-dried tomatoes.
2 When shrimp are cooked, add the green onions, pimentos and tri-colored peppers.
3 Add the white wine and deglaze.
4 Add heavy cream and reduce to right consistency.
5 Add cheese and stir. Add pasta.
